DAY 35

Not that we make not extremely yummy things anyway, but today just seems to be extra yummy. First thing on our list of things to do was to make the pineapple compote for the coconut and pineapple tart for tomorrow. The compote is very easy just the pineapple chunks in a saucepan with some sugar and vanilla bean (not extract, the real thing). I could eat just that forever the sugar made the pineapple a little bit sweeter and the vanilla bean added something, don't know how to explain it, all I can say is make i at home and then eat it and you'll see what I mean. While that was brewing I put the coconut in the pan and cooked it with the gelatin to make a sort of jello-y consistancy, then put it in a cookie sheet with sides and put it in the fridge to harden into that jello-y consistancy. I went back to the pineapple compote and set it aside in a bowl to cool and to have everything seep into each other. There was some chocolate cream left over in the mixing bowl, so we took a little chocolate break and had some fun eating and talking about things, of course all culinary things. We then move on to making the Italian Meringue, what we've been waiting to do all day. To make the meringue is not that difficult. Not much in the recipe and not much to do, you just have to do everything in a certain order and a specific way. Before making the meringue we had taken the pears (from yesterday) and put them with the batter and into the oven. We then take the the lemon cream that we made yesterday and fill up our tarts. We then put the pipping hot meringue cream in a pastry bag and pipe it out onto the the tart. then add the pretty little garnish. We put our Lemon Meringues in the fridge till it was time to go home, then took the other tarts out of the oven. We let them cool a bit then added the chopped almonds and the icing sugar. Cleaned up the kitchen and then had some tarts. IT WAS PURE ABROSIA.
